Chocolate Shortbread

This recipe is an all time favorite, especially at the holidays.

It pairs with just about everything, but my favorite thing is to shape it into sticks for coffee dunking.

You can change up the topping using anything from dark or white chocolate to baileys glaze!



Recipe

8oz butter

2c granulated sugar

2 eggs

1tsp vanilla, almond, coffee, or peppermint extract

1c cocoa

4c flour

1tsp salt


Cream butter & sugar, mix in egg, extract, and cocoa.

Add flour & salt in two additions, the dough is stiff but keep working it until it comes together.


Roll out & cut into desired shapes


Bake at 350 for 5 minutes, depending on the size you cut you'll likely need 5 more minutes, the best way to tell if they're done is by slightly lifting the edges of a cookie, if they hold their shape you're good to go!


Let cool & frost.


Topping suggestions - dark or white chocolate with peppermint, a simple powdered sugar glaze of 1c powdered sugar to 1tbs milk (substitute any liquid! coffee, red wine, orange juice, baileys, whiskey) adjust consistency with 1/2 tsp of liquid at a time.
