Pastry Chef & Food Lover
Shelby Costo is a 3rd generation foodie whose life centers around all things sweet and spirited. Her childhood was filled with chocolate and fond memories of traditional family meals that harken back to her Polish, Irish, and Hungarian roots. She began baking as soon as she could hold a spatula thanks to her mum and grandmother. Her father is an Irish craft beer enthusiast and largely responsible for the spirited portion of her baking.
She began her professional baking career at KB Confections and went on to study at the Art Institute of Pittsburgh. Shelby fell in love with the way various libations could highlight the flavor profile and really pack a punch in otherwise mundane pastries. While at school she was given the opportunity to assist in building a 5ft tall cake for the 100th Anniversary of the Omni Penn Hotel to serve over 500 people. Shelby also placed 2nd in a Pate A Choux competition with her Orange Infused Bourbon Profiterol. She then began her career as a pastry chef at Great Lakes Brewing Co. and learned a lot about flavor pairings & all other things beer!
Shelby is currently crafting desserts for Bull & Bird and working on freelance pastry & cake orders; you can also find her macarons at Caffeine in Lakewood. She is a dog person and former Irish Dance instructor. When she’s not working on her whiskey soaked dreams, Shelby can be found hanging out with her massive dogue, Brulé, watching netflix, and searching the ever changing food scene of the 216 for inspiration.
